Orange Tofu with Sesame Seeds


Ingredients

  • ⅓ Cup Water

  • 2 Tablespoons Cornstarch

  • ¼ Cup Distilled White Vinegar

  • The Zest of 1 Orange

  • 2 Scallions Finely Chopped

  • 3 Tablespoons low Sodium Soy Sauce

  • 3 TBS Honey

  • 2 Garlic Minced

  • 1 TBS Sesame Seeds ( I personally used 2 because I like them, you don’t have to)

  • 1 ½ TS Red Pepper Flakes

  • 1 Package Extra Firm Tofu into 1-inch cubes more or less

  • 2 TBS Coconut or Olive Oil, whichever you prefer

  • 3 Cups Broccoli Florets

  • 1 Red Bell Pepper Diced

  • 1 Green Pepper Diced



Preparation

A) In a bowl whisk together, water, cornstarch, vinegar, orange zest, soy sauce, honey, garlic, scallions, and red pepper flakes if you using any. Combine and whisk all the ingredients. Set aside for later use.

B) Season the tofu with salt if you wish (you already have soy sauce in the mixture above). Remember to drain the tofu well to take all the excess water. Heat 1 TBS in a large saucepan when oil is shimmering add the tofu and lower the heat to medium (be careful the tofu is not as tough as meat so it can burn easily) I would say cook for about 3 to 5 minutes until it gets a little golden brown, take it out the pan and put it on top of a paper towel to absorb the extra oil.


C) Scrape out any excess liquid or tofu from the pan and return it to the stove to medium heat pouring the reminding 1 TBS oil, when the oil is hot add the broccoli, red, green, orange bell pepper cover and cook for about 5-6minutes until the veggies are kinda tender but crunchy still.


D) Last but not least add the sauce you’ve prepared at the begging, lower the heat to low give it a good mix, and add the tofu, at last, the sauce will start to thicken too fast (Do not panic!) just lower the heat, even more, cook all together just for about 2 to 3 minutes. Remove from the heat.


-Serve with brown rice or white rice, whichever you wish, I used Quinoa sometimes, and dig in!!


NOTES: If you don’t consume honey you can substitute it with brown sugar. I used the orange juice at the end to give it more texture to the dish.

TS= Teaspoon
