The sweet potato hummus is delicious. It has that bitter-sweet taste (perfect for those sugar cravings days). You can have it as a snack with fresh veggies like cucumbers, peppers, or carrots.
For the sweet potato hummus, you will need the following:
1 medium to large baked sweet potato.
1 Tbl spoon Tahini.
1/2 of Lemon Juice
1 Clove of garlic grated
1/4 ts spoon cumin. (optional, I didn't use it.)
Salt to taste
Olive oil.
Combine all the ingredients except the olive oil; I used a fork to mash down the sweet potato to blend well with the rest of the ingredients.
Zucchini Waffles You will need:
2 grated Zucchinis.
½ Cup grated yellow Onion.
2 Eggs.
½ Cup Mozarella Cheese.
½ Cup Parmassen Cheese.
Salt and pepper to taste.
I also add a pinch of paprika to add a smoky taste, but that is optional.
How to:
Start by grating your zucchini and onion. You can do it by hand, or you can also use the food processor.
Once the zucchini is grated, transfer it to cheesecloth, or if you don't have one, you also can use many layers of paper towel to wring out as much water as possible.
In a bowl, beat the eggs and add cheese, zucchini, onion, salt, and pepper.
Prepare your waffle maker, then pour a full scoop on it. Follow your waffle maker instructions; make sure your waffles don't stick.
Eat right after they're ready with the sweet potato hummus. They are delicious, especially at this time of the year. You also can freeze them for later use. When frozen, heat them for 30 seconds in the microwave oven.
