3 Healthy and Easy Breakfast Ideas.

When it comes to having healthy meals, we all know what that means at this point, we have so much information nowadays, and most of you know what junk food and what not is. But we all need reminders and ideas and probably a helping hand to guide us back to the right path. Have in my mind, the "right path" means being healthy, energized, sleeping well, having quality time with your loved ones, practice a physical activity you enjoy. Because there is nothing more tedious than doing something you don't like or want.


With all that said, here are some quick and easy breakfast ideas:




This is with sweet potato instead of bread.
My own sweet potato toast with avocado.

1.- AVOCADO TOAST.


INGREDIENTS:

  • 1 slice of bread. Tip: Use bread with no sugar added. Avoid white bread. Opt for sourdough bread, Ezequiel bread, or whole wheat.

  • 1/2 avocado,

  • Garlic powder.

  • 1/4 lime Juice.

  • Salt and pepper.

  • Red pepper flakes (optional)

  • Roasted Pumpkin Seeds or any topping you like. (Optional.)

INSTRUCTIONS:

Toast your slice of bread, or if you are using sweet potato, you can bake it ahead of time.

Mash your avocado. I like to use a fork to do that; it's way more manageable; when it's smooth enough, add the garlic powder, lime, salt, and pepper, mix it all well together.

Spread the avocado mash on top of your toast, add the red pepper flakes and pumpkin seeds or any topping you like.

Topping Ideas: Tomato slices with a drizzle of balsamic vinegar.

Red onion.

An over-easy egg with some shives.


NOTES:

*I sometimes substitute bread with half of the baked sweet potato, and I cut the long side.



2.-CHIA SEEDS PUDDING.



INGREDIENTS:

  • 2 tablespoon Chia seeds.

  • 1/2 cup Almond Milk or any plant-based milk you like.

  • 1/2 teaspoon raw honey.

  • 1/2 Berries, it can be strawberries, blueberries, raspberries, or you can mix them too.


INSTRUCTIONS:

In a glass jar with a lid (like a mason one), pour the almond milk, then the chia seeds and honey, mix well, and let it sit for about 2-3 minutes. then remix it all until it is well combined,

Cover the jar with the lid and store it in the fridge for at least 2 hours or overnight.

When it is ready to eat, you can add the berries.

Optional: You can also add 1 teaspoon of almond butter.


NOTES:

*Chia Seeds are such a great source of omega-3, fatty acids, loaded with proteins and fiber it's such complete supper food.

*Try to avoid excess consumption of Omega-6 fatty acids because they cause inflammation, like sunflower oil, margarine, vegetable oil, corn oil, soybean oil, peanut oil, grape seed oil, canola oil, and processed foods.



3.-OVERNIGHT GLUTEN-FREE OATS.



INGREDIENTS:

  • 1/2 cup Gluten-free oats.

  • 3/4 cup unsweetened Almond milk or any of your choice.

  • 1 tablespoon almond butter.

  • 1 tablespoon pure maple syrup.

  • 1 tablespoon pecans.

  • 1 banana.

  • 1/2 cup Blueberries.

  • Optional sprinkle some cinnamon powder.



INSTRUCTIONS:

In a small glass container with a lid, add the almond milk, almond butter, maple syrup stir everything well together.

Then add the oats and stir more, pressing down the oats until they are well moistened.

Cover the container with the lid Store in the fridge overnight or at least 6 hours.

The following day you add your toppings, blueberries, pecans, and banana if you choose to.

Enjoy!


NOTES:

*Even tho when oats are naturally gluten-free are often manufactured in factories where they process other grains that contain gluten; therefore, they get contaminated.

*Oats contaminated with gluten can cause inflammation, especially for those who suffer from celiac diseases.

*Please do not use quacker instant quick oats. Get Old fashion oats if possible.

*If you are on a weight loss journey, avoid the banana or only use half.

*These oats are great for breakfast or snacks and perfect for those with busy mornings.
